Woks

Woks compared by bottom shape, steel, and hob fit, from hand-hammered carbon steel pow woks to induction-ready flat bottoms and cast iron.

A wok is not a deep frying pan. Its sloped sides and small flat or round base create three heat zones in one vessel: a fiercely hot centre for searing, cooler sloped walls for resting food, and room above to toss without spilling. That shape is what makes a stir-fry cook in minutes instead of steaming in its own liquid, and it is also why a wok behaves so differently from the flat carbon steel skillets in our carbon steel pans guide. Buy the shape for the cooking you do, not the pan you already own.

The first decision is the bottom. A flat bottom wok sits stable on electric, glass, and induction hobs and works on gas too, which is why most home cooks should start there. A round bottom wok is the traditional shape: it concentrates heat in a small pool at the centre and tosses beautifully, but it needs a wok ring on a flat hob and a powerful gas burner to show its advantage. On a standard home hob, a good flat bottom wok will out-cook a round bottom wok that cannot sit flat.

Start with the ranked best-of list for a fast answer, then read the focused guides for induction hobs, everyday cooking, and flat bottom models. The three reviews cover the overall pick, the traditional hand-hammered choice, and the premium hybrid, the two comparisons settle flat vs flat and flat vs round, and the buying guide and fixes page cover seasoning, wok hei, and the problems that spoil stir-fries. This is a full topic: one ranked list, three focused guides, three reviews, two head to head comparisons, and a buying guide.
